I was lucky enough to be given this very same Silpat mat for Christmas, but I’ve been using my mother-in-law’s Silpats for a while now since we’ve been staying here in their house and I loooove them. I don’t use non-stick baking sheets because they off-gas really toxic and carcinogenic fumes when heated, but these lovely little French-made mats turn any plain stainless steel sheet into a perfectly non-sticky surface.

Oh, and to anyone who’s leery of silicone for whatever reason, just an FYI: your parchment paper is coated in silicone, too. So, these mats are a much more eco-friendly (and budget-friendly in the long-term) way to avoid destroying your cookie sheets and make life a lot easier on you in the dish-washing department. And, I personally don’t think there’s anything to worry about with silicone as it’s an inert (nonreactive) material.
